Copycat veggie patty recipe

Makes 4 patties

  • 1 cup mashed potato (cooled)
  • ½ cup grated carrot
  • ½ cup corn kernels
  • ½ cup peas
  • ¼ cup finely diced red capsicum
  • ½ cup breadcrumbs, plus extra for coating
  • 1 tsp each of garlic powder, onion powder and paprika, and salt and pepper to taste

To build: cheese slices, sesame buns, mayo, tomato sauce, lettuce, tomato and onion.

  1. Squeeze any extra moisture out of the grated carrot.
  2. Mix all the patty ingredients and shape into 4 patties.
  3. Coat them in breadcrumbs and chill for 20 minutes so they hold together.
  4. Pan-fry in a little oil for 3–4 minutes a side until golden. You can also bake them at 200°C for 20 minutes.
  5. Add cheese to melt, then build the burger: mayo, lettuce, tomato, onion, patty and tomato sauce.
